This hearty Japanese Curry Rice is packed with tender chicken, potatoes, and carrots in a rich, flavourful curry sauce.
Ingredients:
2 tbsp OKI Premium Sunflower Oil
1 onion
400g chicken meat
1 carrot
3 potatoes
600ml water
3-4 cubes Japanese curry roux

1. Heat OKI Premium Sunflower Oil in a frying pan over medium heat. Add the onion and stir-fry until fragrant.
2. Add the chicken and cook until it is thoroughly cooked and lightly browned.
3. Add the carrot and potatoes, then stir-fry for about 5 minutes. Pour in the water and bring to a boil. Reduce the heat to low and simmer for 15 minutes.
4. Add the Japanese curry roux cubes and stir until completely dissolved and the sauce has thickened. Serve hot with white rice and garnish with seaweed flakes, if desired.
