Strawberry Parfaits
Preparing dessert for your Valentine doesn’t have to be a big production.

These romantic and easy to make strawberry parfaits would be the perfect Valentine’s Day treat?!!
Ingredients:
Strawberry
2 tbsp sugar
1 tsp lemon zest
1tbsp fresh lemon juice
1.5 cups digestive biscuit
4 tbsp unsalted butter
400g cream cheese
4 tbsp OKI Sweetened Beverage Creamer
2 tbsp sugar

Cooking Instructions
1. Remove and discard the stems from the strawberries, then cut the strawberries into bite-sized pieces. Place in a bowl with the sugar, lemon zest, and lemon juice. Stir well to combine, then let this sit for 15 minutes.
2. In the meantime, crush the digestive biscuit with a rolling pin.
3. Combine the digestive biscuit crumbs and melted butter in a bowl, and stir until the crumbs are moistened. Set aside.
4. In a large bowl, whip together the cream cheese and OKI sweetened beverage creamer with a hand mixer, for about a minute on medium high speed, until the mixture is smooth and combined.
5. To assemble the strawberry parfaits, place a few spoonful of the cream cheese mixture into the bottom of a glass. Next add a layer of the buttery digestive biscuit crumbs. Top that with a layer of the strawberries (leave the excess liquid behind and discard), then repeat with one more of each layer. Enjoy immediately, or chill the jars in the fridge for about 30 minutes.
