Mixed Vegetables Cheese Tortilla Wrap

This spinach omelette tortilla is a quick and easy breakfast solution, which only takes a few minutes to make??!!
You can fill the omelette with whatever you like or what you have handy in your fridge.

Ingredients:

2 low-carb tortillas
OKI Premium Sunflower Oil
50g cabbage (sliced)
30g spinach
50g brown button mushroom (sliced)
2 tbsp frozen sweet corn
Salt
Pepper
2 sticks crab meat (sliced)
4 large eggs
2 tbsp tomato sauce
Mozzarella cheese

Cooking Instructions

1. Heat OKI sunflower in a frying pan, stir fry sliced cabbage and spinach, sliced mushroom and sweet corn. Stir fry until slightly cooked, then add in sliced crab meat and stir for about 1 minute. Scoop out half portion of mixed vegetables and set aside for 2nd wrap.
2. Pour 2 beaten egg mixture into the pan, then cover with low carb tortilla before the egg is cooked. Then flip to another side, spread 1 tablespoon of tomato sauce over the egg and sprinkle with some mozzarella cheese. Fold into half and cook for about 30 secs and serve.
3. Pour the remaining mixed vegetables into the pan and repeat step 2. Once done, cut into 4 pieces and enjoy while hot.
