Air Fryer Chicken Salad with Yoghurt Dressing

This Air Fryer Chicken Salad with tangy Garlic Yoghurt Dressing is packed with juicy chicken, crispy potatoes, and fresh broccoli, light on calories but BIG on flavour!

Ingredients:

300g chicken breast
OKI Premium Sunflower Oil
Black pepper
Salt
1 potato
1 whole head garlic
Broccoli
3 tbsp yogurt
Lemon juice

Cooking Instructions

1. Clean and cut the chicken breast into bite-sized pieces. In a mixing bowl, marinate the chicken with 1 tablespoon of OKI Premium Sunflower Oil, black pepper, and salt. Set aside.
2. Clean and cut the potato into bite-sized pieces. Rinse to remove excess starch and pat dry with a kitchen towel. Toss the potato with OKI Premium Sunflower Oil, salt, and pepper. Set aside.
3. Remove the loose outer skin from the garlic head and slice about ¼ inch off the top. Drizzle with OKI Premium Sunflower Oil and wrap in parchment paper.
4. Place the chicken, potato, and garlic in the air fryer basket. Cook at 200°C for 20 minutes.
5. Blanch the broccoli, then place it on a serving plate along with the air-fried chicken and potatoes.
6. In a small bowl, mix the yogurt with lemon juice. Squeeze out the roasted garlic and stir it into the yogurt. Drizzle the garlic yogurt dressing over the chicken salad. Enjoy! 🥗✨
